Chickens are now ready for sale! The processing was completed on Friday and now the chickens are all packaged away neatly in our freezers. Here are a few pictures of when they were out on the pasture.

Everyone? How cooperative were the chickens? ;-)
The core team for chicken processing was led by David with Drew, Joey, Alan and Gemma helping out. It was very efficient with a good sclader and plucker. The chickens were no problem, especially with the steel cones, where you invert the birds before they meet their end. The "killing" cones immobilize the birds making it one of the easiest steps of the process. These chickens are healthier and taste better than anything from the store. The "broiler" team easily slaughtered and processed 100 chickens in a day with time to spare. As we get more familiar with the process, 200+ chickens per day is no problem. These chickens average ~5.4 lbs each when finished and bagged. We still have some left for Chicken on the BBQ when y'all visit.
